Spanish Chorizos
This is the hottest sausage we make - in taste and in sales. It's the classic Spanish sausage, made only from NZ grown beef and spiced traditionally with paprika and chillies. It looks bright red and it tastes red hot. Because they are already cooked, naturally manuka-smoked HOT SPANISH CHORIZOS can be eaten cold as a snack with drinks, in sandwiches and in salads. But the traditional way is to enjoy them hot. Include slices in an authentic paella or to top pizzas, dice them with nachos, add them to chilli beans and serve with sour cream. For NZ DELI-lectable kebabs, simply cut into 2cm thick pieces and thread them onto skewers with capsicums, mushrooms and baby onions. In winter you can add them at the last minute, whole or sliced, into casseroles, hearty soups, rice and pasta dishes.

Pancetta
Once tried, never forgotten. Pancetta is an Italian air-dried style of streaky bacon that gourmets in the know use a hundred different ways - but our Rum-cured Pancetta has some extra tricks of its very own. For a start we use genuine black rum in the cure, which adds a fascinating extra depth to the unique sweetness and fragrance that has taken months to develop. When sliced very thin, pancetta is often substituted for prosciutto crudo and served just as it is, with specialty breads or with fresh fruits, as an appetizer. For cookery it is used sliced or diced. Some pasta sauces use it right from the start, so the succulent fat melts into the dish, so do a range of slow-cooked meat and poultry dishes.
Prosciutto
One of the world's most desired and admired styles of ham. A whole, boneless leg of prime pork is air-dried the traditional way, pressed into a flat oblong and lightly smoked over genuine manuka chips. Before serving, the outer rind is always removed. Then, a thin creamy strip of fat complements the rich, red and slightly translucent flesh: together they offer the palate an extraordinary depth of flavour, finished by a lingering sweetness. Prosciutto crudo should always be served lightly chilled and very thinly sliced. Many enjoy it just like that, perhaps only with a specialty bread and extra virgin olive oil - strong flavours mask most of the finesse.

This mid-eye bacon, has a lot less water and fat than most other bacons which means more sizzle and more bacon to enjoy. Picata is pre-cooked so its safe to eat even before cooking!! Beef Pastrami
Of all our smoked meats, Beef Pastrami is the absolute best-seller. It shouldn't be a surprise when you look at the outstanding value for money it brings to you - top quality lean beef topsides, natural manuka smoking and a uniquely tasty spice blend that's got a tasty tang without being too hot. First those topsides are trimmed of fat and then cured in NZDELI's special brine.
